Tomatoes and Eggs
Sometimes the simplest meal brings the most pleasure.
Anything my mother cooked with her loving hands was wonderful. I remember as a child coming home from school for lunch and having mamma's tomato and eggs.
Italian plum tomatoes (squeezed)
Shredded Romano cheese
Heat olive oil in heavy bottomed saucepan. Add salt to taste and Italian plum tomatoes (squeezed).
Sauté. In a bowl beat eggs. Add a little cheese to taste. Add egg mixture to tomatoes and heat through. Gently spoon mixture in pan to center until tomatoes are just combined. Turn off fire and top with Romano cheese and basil. Serve with rustic bread.
